Salmon with Romesco Sauce

Smoky romesco sauce topped with roasted green beans and juicy salmon. A restaurant worthy healthy meal ready in under 30 minutes!

- 3 (5 to 6 ounce) fillets salmon
- 1 pound green beans, trimmed
- 1/2 cup prepared romesco sauce (store-bought or homemade)
- olive oil, to taste
- salt and pepper, to taste
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit.
- Step 2: Rinse, dry, and trim the green beans. Spread the green beans on a baking sheet and toss with a little olive oil. Season with salt and pepper. Roast for 8 minutes, or until lightly browned.
- Step 3: Meanwhile, heat a large frying pan over medium-high heat. Rub a little olive oil over the salmon fillets and season with salt and pepper. Add the salmon, skin side facing up. After about 4 minutes, flip it over and cook for another 4 minutes. Note: Thick fillets will need about 4 to 5 minutes per side, while thin fillets will need 3 to 4 minutes per side. After cooking, you can gently peel off the skin if you prefer.
- Serve: Swoosh a big dollop of the warm romesco sauce over each plate with the back of a spoon. Line some green beans over the sauce and top with a salmon fillet. Enjoy!
