Roasted Red Cabbage

The easiest roasted red cabbage that's tender with tasty crispy-browned edges.

- 1 medium red cabbage
- 2 tablespoons olive oil
- salt and pepper, to taste
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit.
- Step 2: Chop the cabbage in half and remove the hard bottom stalk. Roughly chop the cabbage halves into 1-inch chunks, not bothering to separate most of the chunks.
- Step 3: Spread the chopped cabbage over a large baking sheet and toss with the olive oil. Season with salt and pepper and spread evenly so that all the pieces are in a single layer. Roast for 15 to 20 minutes, stirring the cabbage halfway through the cooking time. They will be ready when they are fork-tender with crispy browned pieces throughout (the browning adds flavor).
- Serve: Enjoy warm with a drizzle of olive oil on top.
