Roasted Grape Salad with Nuts

Roasted Grape Salad with toasted nuts, tangy cheese, greens, and a simple honey mustard vinaigrette. If you haven't tried them yet, roasted grapes have a sweet, deep flavor and soft jam-like consistency that's great in this salad.

Shopping List
- 3 handfuls bitter greens (such as arugula or escarole)
- 6 tablespoons walnuts or pecans
- 1/4 heaping cup blue cheese, goat cheese, or sliced parmesan (about 1 ounce)
- 1 cup seedless grapes
- 1 teaspoon olive oil
- 1/4 teaspoon dried thyme (optional)
- Honey Mustard Dressing or Balsamic Vinaigrette, to taste
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit. Spread the grapes on a lined baking sheet and toss with the optional thyme and olive oil. Bake for 15 minutes, stirring halfway. They will blister and release juice some juices. Set aside.
- Step 2: Meanwhile, toast the nuts in a dry frying pan over medium heat for 2 to 4 minutes. They will be lightly browned and fragrant when ready. Set aside.
- Step 3: Stir together the dressing ingredients in a small jar. Set aside.
- Step 4: Wash and chop the greens into bite-sized pieces if needed. Place the greens in mixing bowl and toss with a splash of the dressing. Add the toasted nuts, warm grapes, and crumbled cheese.
- Serve: Enjoy with any extra dressing on the side.
