Roasted Asparagus with Breadcrumbs

Tender roasted asparagus with a crunchy breadcrumb topping. Delicious, easy, and elegant enough for guests.

Shopping List
- 1 pound fresh asparagus
- 1/2 cup breadcrumbs or panko (we use instant grain-free breadcrumbs)
- 1 garlic clove, minced
- 1 1/2 tablespoons olive oil (divided)
- 1/2 tablespoon butter, melted (or olive oil)
- salt and pepper, to taste
- lemon, for serving
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit.
- Step 2: In a small bowl, stir together the breadcrumbs, garlic, 1/2 tablespoon olive oil, and melted butter. Season with salt and pepper.
- Step 3: Snap off the hard ends of the asparagus (if you bend the asparagus near the base, it will snap right off). Spread the asparagus on a baking sheet and toss with the remaining 1 tablespoon of olive oil. Season with salt and pepper.
- Step 4: Line up the asparagus and sprinkle the breadcrumb mixture over the center of the asparagus. Roast for 10 to 12 minutes.
- Serve: Top with a squeeze of lemon juice and/or zest. Enjoy.
