Red Pepper and Goat Cheese Pizza

I grew up eating a similar pizza to this in a local restaurant chain in the old town center and I still remember it so fondly. Crispy pizza crust, tomato sauce, roasted bell peppers, and tangy goat cheese. No mozzarella needed.

Shopping List
- 1 fresh or frozen pizza crust of choice
- 1/2 cup to 3/4 cup pizza sauce
- 1 to 2 roasted red bell peppers (store-bought or homemade)
- 2 to 3 ounces goat cheese, crumbled
- 1/2 teaspoon garlic powder
- red pepper flakes, to taste
- olive oil, for serving
Instructions
- Step 1: Pre-bake the crust according to package directions.
- Step 2: Spread a layer of tomato sauce over the pizza crust. Then use your hands to tear the bell peppers into thin strips and place them evenly over the sauce. Add the goat cheese in dollops over the whole pizza. The exact amounts needed will vary slightly depending on the size of your pizza crust.
- Step 3: Place the pizza back into the hot oven until cheese begins to turn golden. For my crust, this took about 6 minutes at 450°F. A pizza stone or pan will yield the crispiest crust results.
- Serve: Remove the pizza from the oven, top evenly with garlic powder, and drizzle with optional olive oil. Slice and enjoy.
