Radicchio Salad with Dried Apricots

Contrasting flavors and textures makes this salad taste very special, but it's actually very easy to make. Radicchio, sweet dried apricots, celery, and nutty roasted cashews with a curried tahini dressing.

For the Salad
- 1/2 small raddichio, chopped (about 2 cups)
- 2 celery stalks, thinly sliced
- 1/2 cup roasted and salted cashews
- 1/4 dried apricots, chopped For the Tahini Dressing
- 1 tablespoon tahini
- 1 tablespoon extra virgin olive oil
- 1 tablespoon water
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup or agave syrup (optional)
- 1/4 teaspoon curry powder
- 1/8 teaspoon salt and pepper
Instructions
- Step 1: Stir together all of the Tahini Dressing ingredients in a small bowl or jar until smooth. Refrigerate until ready to use.
- Step 2: Place the chopped radicchio, celery, cashews, and apricots in a mixing bowl. Toss with a splash of the Curried Tahini until the salad is lightly coated.
- Serve: Enjoy with any extra dressing on the side.
