Purple Sweet Potato Mash

These fluffy mashed sweet potatoes make a deliciously fun and healthy side dish recipe. Seasoned simply with rosemary, oil or butter, shallot, and a hint of garlic. Purple sweet potatoes make this extra fun, but orange sweet potatoes will also work just as well in this easy recipe.

- 1 1/2 pounds stokes purple sweet potatoes
- 1/4 cup non-dairy milk (such as coconut milk)
- 1/4 cup shallots or onion, thinly sliced
- 2 tablespoons coconut oil or butter alternative
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, minced or pressed
- 2 teaspoons fresh rosemary, chopped
- 1/2 teaspoon salt
- pepper, to taste
Instructions
- Step 1: Heat the 1 tablespoon of olive oil in a skillet over medium-high heat. Add the sliced shallot and cook for 8 to 10 minutes, stirring often. The shallots will be ready when they are golden and very soft. Set aside.
- Step 2: Meanwhile, peel and chop the potatoes into 1 inch pieces.
- Step 3: Bring a large pot of water to a boil over high heat. Add the chopped potatoes and boil for 10 to 15 minutes, or until the potatoes are fork tender. Drain.
- Step 4: Place the warm potatoes into a large mixing bowl or food processor. Add the cooked shallots (including the oil), non-dairy milk, coconut oil, garlic, rosemary, salt, and pepper to the potatoes. Mash them with a hand masher, electric beater, or the food processor until creamy.
- Serve: Scoop the mashed sweet potatoes into a serving bowl and dollop with extra butter or olive oil if desired. Enjoy.
