Pumpkin Overnight Oats

Creamy and healthy pumpkin spiced overnight oats. This no-cook and easy breakfast tastes like pumpkin pie.

Shopping List
- 1/2 cup rolled oats (not steel-cut)
- 1/2 cup non-dairy milk
- 1/4 cup non-dairy yogurt
- 3 tablespoons pumpkin puree
- 1 scoop vegan protein powder of choice
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1/16 teaspoon ground nutmeg
Instructions
- Step 1: In a sealable mason jar or bowl, add all of the ingredients and stir until well combined.
- Step 2: Transfer to the fridge for at least 2 hours, ideally overnight, to thicken.
- Serve: Grab a spoon and enjoy your overnight oats chilled or slightly warmed. Top with non-dairy whipped cream or chopped nuts for an extra treat.
