Protein Cookie Dough

Shopping List
- 5 tablespoons non-dairy yogurt (Note 1)
- 2 scoops (25g) vegan vanilla protein powder (we use Nuzest Digestive Support)
- 2 tablespoons almond or cashew butter
- 1/2 tablespoon coconut flour
- mini chocolate chips, to taste
Instructions
- Step 1: Stir together the yogurt, protein powder, nut butter, and coconut flour in a small bowl until it reaches a thick cookie dough consistency. Note: All brands of protein powder will absorb liquid differently. This ratio was best for the specific protein powder we used. If your cookie dough seems too dry, add a little more yogurt or nut butter. Too wet? Add more protein and a pinch of coconut flour.
- Serve: Stir in the chocolate chips. Enjoy!
Recipe Notes
Note 1: Use a regular yogurt, rather than Greek-style yogurt here (it will be too thick). Our favorite to use is Harmless Harvest coconut yogurt.
