Pomegranate and Walnut Salad

Pomegranate and Walnut Salad with massaged kale, arugula, and goji berries in a simple lemon dressing. Healthy, refreshing, and tasty.

For the Salad
- 1 1/4 ounces arugula (or 1 very large handful)
- 1 handful kale, washed and hard stems removed
- 1/4 cup pomegranate seeds
- 1/4 cup walnuts
- 3 tablespoons goji berries (Note 1)
- 1 tablespoon hemp seeds For the Dressing
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey (or agave syrup)
- salt and pepper, to taste
Instructions
- Step 1: Wash and dry the kale. Remove the thick, fibrous stems from the kale and chop the kale leaves into bite-sized pieces. Measure out 1 handful(s) of the kale and place it in a mixing bowl.
- Step 2: Stir together dressing ingredients in a small bowl.
- Step 3: Toast the walnuts in a dry frying pan over medium heat for 3 to 5 minutes, or until fragrant. Shake the pan often to avoid burning. Set aside.
- Step 4: Pour a splash of the dressing into the mixing bowl with the kale. Use your hand to massage the dressing into the leaves for 15 seconds, or until softened. Note: Even if you are making this salad for a meal prep, do not skip this step of massaging.
- Step 5: Add the remaining arugula, pomegranate seeds, toasted walnuts, goji berries, and hemp seeds to the mixing bowl with the kale. Drizzle with the remaining dressing, to taste, and toss to combine.
- Serve: Divide into plates and enjoy with any extra dressing on the side.
Recipe Notes
Note 1: No goji berries? Try using dried cranberries or 1/4 cup of fresh blueberries.
