Pear and Blue Cheese Salad! A classic combination of pears, blue cheese, and walnuts combined with fresh spinach and a simple honey mustard vinaigrette. Ready in 15 minutes.

For the Salad
- 5 ounces baby spinach (about 5 handfuls)
- 1 firm pear, thinly sliced
- 1 cup walnuts, chopped
- 2 ounces blue cheese, crumbled
- 6 tablespoons dried cranberries For the Vinaigrette
- 6 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey (or maple syrup)
- salt and pepper, to taste
Instructions
- Step 1: Stir together the vinaigrette ingredients until smooth. Set aside.
- Step 2: Add the spinach, sliced pear, walnuts, blue cheese, and cranberries to a large salad bowl. Toss with a splash of the vinaigrette until lightly coated.
- Serve: Divide the salad onto plates and serve with the remaining vinaigrette on the side. Enjoy.
