Panko-Crusted Salmon

Easy baked salmon topped with a crunchy panko or breadcrumb topping! Moist, flakey, and ready in under 20 minutes.

Shopping List
- 3 (5 ounce) salmon fillets
- 1/4 cup panko crumbs (or instant grain-free breadcrumbs)
- 1/2 garlic clove, minced
- 1/2 tablespoon olive oil or melted butter
- 1/2 tablespoon dijon or wholegrain mustard
- 1/2 tablespoon mayonnaise
- 1/8 teaspoon dried thyme (optional)
- salt and red pepper flakes, to taste
- lemon, for serving
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Combine the panko (or breadcrumbs), garlic, olive oil or melted butter, and thyme in a small bowl. Season with salt and red pepper flakes (adjust or omit the salt if the panko is pre-seasoned). In another bowl, stir together the mayonnaise and mustard.
- Step 3: Place the salmon in a baking dish or lined baking sheet and spread the mustard mixture all over the tops of the fillets. Top with the panko mixture, using the mustard mixture as a 'glue'.
- Step 4: Bake for 10 to 12 minutes, or until cooked through.
- Serve: Squeeze some lemon on top and enjoy!
