    For the Cake
  • 3 tablespoons non-dairy milk
  • 3 tablespoons blanched almond flour
  • 1 1/2 tablespoons coconut flour
  • 1 tablespoon coconut sugar (or cane sugar)
  • 1 tablespoon grapeseed oil, coconut oil, or melted butter
  • 1/2 teaspoon vanilla extract Toppings (Optional)
  • sprinkles, chocolate chips, fruit, or ice cream

Instructions
  1. Step 1: Add all of the cake ingredients to a small ramekin or wide microwaveable mug. Stir until smooth and well combined (be sure to get into the corners as well). If using sprinkles, add a few into the batter.
  2. Step 2: Microwave the ramekin for 60 to 75 seconds, depending on your microwave wattage. Top with any optional sprinkles and/or chocolate chips and let the cake sit for 2 minutes (this time will cook the cake through all the way).
  3. Serve: Grab a spoon and enjoy straight from the ramekin or mug.
