Paleo Vanilla Mug Cake

For the Cake
- 3 tablespoons non-dairy milk
- 3 tablespoons blanched almond flour
- 1 1/2 tablespoons coconut flour
- 1 tablespoon coconut sugar (or cane sugar)
- 1 tablespoon grapeseed oil, coconut oil, or melted butter
- 1/2 teaspoon vanilla extract Toppings (Optional)
- sprinkles, chocolate chips, fruit, or ice cream
Instructions
- Step 1: Add all of the cake ingredients to a small ramekin or wide microwaveable mug. Stir until smooth and well combined (be sure to get into the corners as well). If using sprinkles, add a few into the batter.
- Step 2: Microwave the ramekin for 60 to 75 seconds, depending on your microwave wattage. Top with any optional sprinkles and/or chocolate chips and let the cake sit for 2 minutes (this time will cook the cake through all the way).
- Serve: Grab a spoon and enjoy straight from the ramekin or mug.
