Paleo Chocolate Mug Cake

Shopping List
- 2 tablespoons cocoa powder
- 1 1/2 tablespoons coconut sugar
- 1 1/2 tablespoons non-dairy milk
- 1 tablespoon smooth nut butter (such as almond butter)
- 1 tablespoon avocado oil or melted butter
- 2 teaspoons coconut flour
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
Instructions
- Step 1: Combine all ingredients in a large microwavable mug or 4-inch ramekin. Stir until smooth and no lumps remain (especially the bottom corners).
- Step 2: Microwave for 45 to 60 seconds, depending on your microwave wattage. Carefully remove from the microwave. If making more than 1 serving, microwave each mug separately.
- Step 3: Scatter any toppings such as chocolate chips, chocolate-hazelnut butter, or almond butter on top of the warm cake. Let the cake cool for about 2 minutes after cooking. The residual heat will finish cooking the cake and melt the toppings.
- Serve: Enjoy warm with an optional scoop of ice cream.
