Paleo Apple Muffins

Fluffy apple cinnamon muffins filled with warm soft apple pieces and a crunchy streusel topping. Made with almond flour, eggs, and applesauce. Grain-free.

For the Muffins
- 2 1/2 cups blanched almond flour
- 3/4 cup coconut sugar
- 4 eggs
- 1/4 cup unsweetened applesauce
- 1/4 cup non-dairy milk
- 1 small apple, chopped into small pieces
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt For the Streusel Topping
- 3/4 cup blanched almond flour
- 6 tablespoons coconut sugar
- 6 tablespoons coconut oil, melted
- 3 tablespoons coconut flour
- 1/2 tablespoon cinnamon
- pinch of salt
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin with liners, or use a silicon muffin tin.
- Step 2: Combine all of the streusel topping ingredients in a small bowl. Mix it until it reaches the consistency of small pebbles. Refrigerate.
- Step 3: Mix all of the muffin ingredients, except the apple pieces, together in a bowl until no lumps remain. Fold in the apple and spoon the batter into the muffin tins, 3/4 of the way to the top.
- Step 4: Sprinkle the muffin tops with the streusel, about 1 spoonful per muffin.
- Step 5: Bake the muffins for 23 to 25 minutes. For jumbo-sized muffins, you will need to cook the muffins 5 to 10 minutes longer and cover the muffins with foil if the tops are over-browning.
- Serve: Place the muffins on a cooling rack for at least 15 minutes before handling. Enjoy!
