Mustard greens with tomato sauce transforms bundles of mustard greens into an easy, healthy and flavorful Mediterranean side dish!

  • 1 large bunch mustard greens (about 8 ounces)
  • 1 1/4 cups cherry tomatoes, quartered (175 grams)
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • red pepper flakes, to taste

Instructions
  1. Step 1: Let's start with the tomato sauce. Heat a large frying pan over medium heat. Add the tomatoes and cook until softened, stirring frequently and squishing the tomatoes down with a fork. This should take about 10 to 15 minutes. If the tomatoes are browning too quickly, lower the heat.
  2. Step 2: Once soft and sauce-like, turn off the heat. Add the olive oil and salt. Set aside, you should have about 1/2 cup of tomato sauce.
  3. Step 3: Bring a large pot of generously salted water to a boil.
  4. Step 4: Thoroughly rinse the greens to remove any dirt or debris trapped in the leaves. Roughly chop the leaves.
  5. Step 5: Place the chopped greens in the boiling water and cook, covered, for about 9 minutes. The greens will be ready when they're fork tender. Drain and toss in the frying pan with the tomato sauce until warmed through. Add red pepper flakes, to taste.
  6. Serve: Transfer to a serving bowl and top with an extra drizzle of olive oil. This is great with Baked Fish with Potato Crust.
