Mushroom Walnut Taco Meat

This is an easy, meatless wonder. Mushrooms, walnuts, and a few seasonings are mixed in a food processor and then baked until golden brown. That's it. This taco meat is delicious in tacos (duh), burritos, salads, and bowls. You have the option here to use whichever seasonings you prefer, easily transforming this any cuisine-style you're craving.

Shopping List
- 6 ounces white mushrooms, whole or sliced
- 3/4 cup walnuts
- 2 tablespoons tomato paste
- 1/2 tablespoon low-sodium tamari
- 1/2 tablespoon olive oil
- 1 teaspoon seasoning of choice (Italian blend, taco seasoning, etc)
- 1/2 teaspoon salt (adjust to taste preference)
- 1/2 teaspoon garlic
- red pepper flakes, to taste
Instructions
- Step 1: Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Step 2: Place all ingredients in a food processor and pulse until the mixture is ground and chunky, like a thick paste (see reference picture). Transfer to the lined baking sheet, spreading out the mushroom mixture into small dollops so that there is more surface area exposed. Bake for 30 minutes, stirring it halfway through the cooking time to brown on both sides.
- Serve: Use this mushroom meat in your favorite vegan tacos, bowls, salads, and more. Enjoy!
