Miso Ground Turkey

The best ground turkey in a savory umami sauce made from miso, tamari, mirin, and ginger. Easy, delicious, and great for meal prep. Recipe adapted from Just One Cookbook.

Shopping List
- 1 pound ground turkey (93% lean)
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1/4 cup water
- 2 tablespoons mirin (we use this one)
- 2 tablespoons sake (Note 1)
- 1 tablespoon tamari
- 1/2 tablespoon corn starch
- 3 tablespoons miso (we use mellow white miso)
- 1 1/2 tablespoons coconut sugar or cane sugar
- 2 scallions, sliced
Instructions
- Step 1: Grate the ginger. Set aside.
- Step 2: In a small bowl, combine the water, mirin, sake, soy sauce, and starch. Stir well.
- Step 3: Heat the sesame oil in a frying pan over medium-high heat. Once hot, add the ground turkey and ginger. Cook until the meat is no longer pink, about 5 to 6 minutes. Keep breaking it up into small pieces with a spatula.
- Step 4: Drain the liquid from the turkey and place it back in the pan over medium heat. Add the miso and sugar. Mix this into the meat until well combined, about 1 minute.
- Step 5: Pour in the soy sauce mixture and stir until the cooking liquid has reduced to your liking, about 1 to 2 minutes. Stir in the scallions in the final minute.
- Serve: Enjoy! This is great over a bowl of rice and bok choy or broccoli.
Recipe Notes
Note 1: No sake? In a pinch, you can substitute with an equal amount of water and a little more mirin.
