Mango Ginger Energy Balls

Mango and Ginger Energy Balls made from a blend of dates, dried mango, apricots, and sunflower seeds. Bonus? These delicious bite-size snacks are potentially stomach-soothing thanks to the addition of ginger and cinnamon.

Shopping List
- 3/4 cups raw sunflower seeds
- 3/4 cup pitted medjool dates
- 1/2 heaping cup dried mango or papaya
- 1/4 cup dried apricots
- 4 tablespoons vegan protein powder (or more sunflower seeds)
- 1 1/4 teaspoons ground ginger
- 1 teaspoon maca
- 1/4 teaspoon cinnamon
Instructions
- Step 1: Combine all ingredients in a food processor. Blend until the mixture balls up and the large nuts pieces are broken down. The dough should be able to stick into a ball shape when pressed between your fingers. If it doesn't seem sticky enough, add more dried dates, apricot, or mango.
- Step 2: Use your hands to roll the dough into small ping-pong sized balls.
- Serve: Enjoy. Store in the freezer or refrigerator.
