Lentil Walnut Veggie Burgers

These savory veggie burgers are so satisfying. The ingredient list is short - only 6 main ingredients and a food processor required. The flavor of the lentils really shine through here, along with naturally meaty walnuts.

Shopping List
- 2 cups cooked green or french lentils (Note 1)
- 1/2 brown or yellow onion
- 1/2 cup carrots, grated
- 1/4 cup walnuts, chopped
- 2 tablespoons flax meal
- 2 tablespoons brown rice flour
- 1/2 teaspoon salt
- pepper, to taste
Instructions
- Step 1: In a food processor, add in 1/4 cup of the carrots and 1 cup of the lentils. Next, pulse in all of the onion, salt, brown rice flour, and flax meal. Pulse everything until well combined and a thick paste forms.
- Step 2: Transfer the burger blend to a mixing bowl. Add in the remaining 1/4 cup of carrots, 1 cup of lentils, and all of the walnuts. Stir to combine.
- Step 3: Shape the lentil mix into 4 to 6 patties. Refrigerate 20 minutes to overnight. This resting time will help the flax to bind.
- Step 4: Pan-cook the burgers on an oiled frying pan over medium-high until well-browned, about 3 to 4 minutes per side.
- Serve: Enjoy between sandwich buns, on a salad, or on its own. Extra burgers freeze very well.
Recipe Notes
Note 1: We like to use pre-steamed lentils, such as the ones at Trader Joe's. They're already perfectly cooked for this recipe.
