Lemon Broccoli Salad

Lemon Broccoli Salad! Just tender steamed broccoli, avocado, lemon, olive oil, and a pinch of cumin. Ready in 15 minutes and perfect for a picnic.

Shopping List
- 12 ounces broccoli florets (about 1.5 heads, Note 1)
- 1 large avocado, diced
- 3 tablespoons extra-virgin olive oil
- 1/2 lemon, juiced
- 1/4 teaspoon ground cumin
- salt and pepper, to taste
Instructions
- Step 1: Prepare a steamer over about an inch of water. Bring to a boil.
- Step 2: Cook the broccoli in the steamer until fork-tender but still bright green in color, about 4 to 5 minutes. Drain the cooked broccoli and submerge it in ice water to stop the cooking process.
- Step 3: Drain the broccoli well and dice it into bite-sized pieces.
- Step 4: Add the broccoli, avocado, lemon, olive oil, and cumin to a serving bowl. Season well with salt and pepper. Toss to coat.
- Serve: Enjoy at room temperature or slightly chilled. This is great alongside Lentil Walnut Veggie Burgers.
Recipe Notes
Note 1: Don't waste those stalks! Before steaming, peel the upper stalks to remove the fibrous peel and dice into bite-sized pieces.
