Keto Chicken and Broccolini Meal Prep! Just chicken, broccolini, cucumber, tomato, and greens drizzled in olive oil and lemon juice. Super easy! We love it topped with avocado and feta for a healthy, light meal.

For the Bowl
- 1 pound cooked chicken breast, sliced (great with poached chicken or rotisserie)
- 8 ounces broccolini
- 2 cups cherry tomatoes, halved
- 2 cups cucumber, sliced
- 3 handfuls arugula
- 5 tablespoons extra-virgin olive oil, divided
- 2 tablespoons lemon juice
- avocado and/or feta, to taste
- salt and pepper, to taste
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit. Spread the broccolini on a sheet pan and toss with 1 tablespoon of the olive oil, some salt, and some pepper. Roast for 8 to 10 minutes, or until crisp but bright green. Set aside.
- Step 2: Meanwhile, stir together the remaining 4 tablespoons of olive oil, lemon juice, and a pinch of salt and pepper in a small bowl. This will be the simple dressing.
- Step 3: Chop the tomatoes, cucumber, and optional avocado.
- Serve: Build the bowls with the arugula, sliced chicken, roasted broccolini, tomatoes, cucumbers, optional avocado, and optional feta. Season with salt and pepper. Enjoy with the lemony dressing.
