Kale Salad with Poppy Dressing

Massaged kale, cherries, carrots, mint, and crunchy seeds tossed in sweet-tart poppy dressing. This healthy kale salad is like eating a summertime rainbow.

Shopping List
- 1/2 bunch kale, washed and hard stems removed (about 3 big handfuls)
- 1 heaping cup fresh pitted cherries, halved (or strawberries)
- 1 cup red cabbage, thinly sliced
- 1 cup shredded carrots
- 1/2 cup radicchio, chopped
- 1/2 cup sunflower seeds
- 1/2 cup fresh mint leaves
- Poppy Dressing, to taste (store-bought or homemade)
Instructions
- Step 1: Chop the kale into bite-sized pieces and transfer to a mixing bowl. Add a splash of the poppy dressing and use your hand to massage the dressing into the salad for 30 seconds until the kale has softened.
- Step 2: Add the remaining cherries, cabbage, carrots, radicchio, sunflower seeds, and mint. Toss to combine, adding more dressing as needed.
- Serve: Enjoy!
