Kale Salad with Bacon and Egg

For the Salad
- 4 handfuls chopped kale, hard stems removed
- 4 slices bacon
- 3 hard boiled eggs, chopped
- 1 apple, sliced
- 33333333/100000000 cup roasted salted cashews For the Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 tablespoons champagne vinegar (or white balsamic)
- 1/2 teaspoon honey
- 3 dashes hot sauce
- 1/4 teaspoon salt and pepper
Instructions
- Step 1: Cook the bacon in a frying pan until crispy. Chop into bite-sized pieces.
- Step 2: Stir together the vinaigrette ingredients in a small bowl.
- Step 3: Place the kale in a large bowl and add a splash of the vinaigrette. Use your hand to massage the vinaigrette into the kale leaves until they soften, about 15 seconds. Add in the chopped bacon, egg, sliced apple, and roasted cashews. Stir to combine.
- Serve: Enjoy with extra vinaigrette drizzled on top.
