How To MakeDiet Type: Plant-based
Shopping List
- 2 large onions (any color will work)
- 1 tablespoon olive oil
- salt, to taste
Instructions
- Step 1: Slice the onions in half and remove the external peel. Cut off the tough root end and then thinly slice onion lengthwise, starting at one side and working all the way to the other. Aim for slices that are about ¼ inch thin.
- Step 2: Heat the oil in a frying pan over medium-high heat. A wide pan will allow the onions to caramelize rather than steam. Add the onions and season with a sprinkle of salt. Stir occasionally for 10 minutes. The trick is to leave them alone enough to brown, but not to the point that they burn.
- Step 3: At the 10 minute mark, the onions should be blonde-colored. Continue cooking for another 10 minutes, stirring more often now to prevent burning. Add in a little splash of water to the pan periodically to prevent sticking.
- Step 4: At this 20 minute point, the onions will be golden-brown and very soft. You can stop cooking them now, or continue cooking for another 5 to 10 minutes for deep caramelization.
- Serve: Enjoy. This is great with burgers, topped over mujadara, tossed into beet salads, or pizzas.
