Shopping List
- 2 large boneless skinless chicken breasts
- 6 tablespoons coconut aminos (Note 1)
- 2 tablespoons EACH honey, sesame oil, and avocado oil
- 4 garlic cloves, chopped
- 1 tablespoon cornstarch (or arrowroot)
- 1 tablespoon cold water
- 1 tablespoon ketchup (optional)
- 1/4 teaspoon salt
- chopped scallions and sesame seeds, for topping
Instructions
- Step 1: Stir together the starch and cold water in a small bowl to make a smooth slurry. Set aside.
- Step 2: Rinse and pat the chicken dry. Dice the chicken into bite-sized pieces.
- Step 3: Heat the 2 tablespoons of avocado oil in a wide frying pan over medium-high heat. Once hot, add the chicken and garlic and cook until the chicken is cooked almost all of the way through (about 5 minutes). Stir regularly.
- Step 4: Add the coconut aminos, honey, sesame oil, optional ketchup, and salt to the pan with the chicken. Give the slurry a little stir if it settled and then stir it quickly into the pan. Cook for 2 more minutes, or until the sauce has thickened and the chicken is fully cooked.
- Serve: Top with scallions and sesame seeds and enjoy with rice and/or vegetables.
Recipe Notes
Note 1: Coconut aminos can be substituted with low-sodium tamari in a pinch. To do so, use 1.5 tablespoons of tamari + 1.5 tablespoons of water to substitute the 3 tablespoons of aminos. Adjust salt to your taste preference.
