Ground Beef Burrito Bowls

This ground beef burrito bowl is the best easy meal prep recipe with seasoned beef, warm rice, sautéed veggies, and refried beans. Top it off with your favorite fixings and you're set! Vegan option.

For the Beef
- 1 pound lean ground beef (Note 1 for substitutions)
- 1 heaping tablespoon taco seasoning (store-bought or homemade) For the Bowl
- 1 bell pepper, sliced
- 1/2 onion, sliced
- 1 tablespoon olive oil
- 2 to 3 cups cooked white rice (Note 2)
- 1 (15 ounce) can refried beans Optional Toppings
- avocado, hot sauce, crushed tortilla chips, cheese, sour cream, and/or cilantro
Instructions
- Step 1: Cook the rice in a rice cooker, stovetop, or with a microwaveable option. As reference, 1 cup of uncooked rice will equal around 3 cups of cooked rice.
- Step 2: Heat a frying pan over medium-high heat and add 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Cook, stirring only every minute or so, for 4 to 5 minutes. The vegetables will be ready when they are soft but still a bit crisp. Transfer to a bowl.
- Step 3: Put the empty pan back over medium high heat and add the ground beef. Cook for 5 to 6 minutes, or until no longer pink inside. Use the side of the spatula to break the meat into small pieces as it cooks.
- Step 4: Once the meat has cooked, drain any released liquid and then put it back in the pan with the taco seasoning and a good splash of water. Season with salt as desired. Cook the meat over medium heat until the water has cooked off, about 1 to 2 minutes. Set aside.
- Step 5: Warm the refried beans in a pan or microwave until warm and creamy.
- Serve: Assembly time! Build your bowls with a scoop of warm rice, refried beans, beef, and pepper mix. Top with your favorite fixings and enjoy!
Recipe Notes
