Ground Beef and Veggies with Rice

This Ground Beef and Veggies with Rice is an easy and tasty meal-in-one. Sautéed vegetables, taco-seasoned beef, and buttery rice.

For the Beef
- 1 pound lean ground beef
- 1 heaping tablespoon taco seasoning (store-bought or homemade) For the Vegetables
- 1 bunch broccolini (about 6 ounces)
- 1 bell pepper, sliced
- 1/2 onion, sliced For the Rest
- cooked white rice
- butter or ghee (optional)
- sliced scallions and/or chili onion crunch (optional, for topping)
Instructions
- Step 1: Cook some rice in a rice cooker, stovetop, or with a microwaveable option. As reference, 1 cup of uncooked rice will equal around 3 cups of cooked rice.
- Step 2: Slice the bell peppers and onion. Slice any thick broccolini stalks in half lengthwise and horizontally, until they are similar in size to the sliced bell pepper.
- Step 3: Heat a frying pan over medium-high heat and add a little splash of olive oil. Add the sliced broccolini, bell peppers, and onion. Season with salt. Cook, stirring only every minute or so, for 5 to 6 minutes. It will be ready when the vegetables have softened but are still vibrant. Transfer to a bowl.
- Step 4: Put the empty pan back over medium high heat and add the ground beef. Cook for 5 to 6 minutes, or until no longer pink inside. Use the side of the spatula to break the meat into small pieces as it cooks.
- Step 5: Once the meat has cooked, drain any released liquid and then put it back in the pan with the taco seasoning and a good splash of water. Season with salt as desired. Cook the meat over medium heat until the water has cooked off, about 1 to 2 minutes. Set aside.
- Serve: Build your plate with a scoop of rice, some veggies, and beef. Melt a pat of butter over the hot rice and top with your favorite fixings. Enjoy!
