Grilled Vegetable Bowls with Hummus

Grilled Vegetable Bowls with zucchini, bell pepper, buttery avocado, and rice with a big dollop of creamy hummus. No grill needed and ready in just 15 minutes.

Shopping List
- 2 cups cooked brown rice or grain blend
- 2 bell peppers (any color)
- 2 zucchinis
- 2 avocado, diced
- 1 cup hummus (store-bought or homemade)
- 2 tablespoons olive oil or avocado oil
- salt and pepper, to taste
- extra-virgin olive oil and lemon juice, for drizzling
Instructions
- Step 1: Cook or defrost the rice according to package directions.
- Step 2: Slice the zucchini into rounds and cut the bell pepper into wedges.
- Step 3: Heat the 2 tablespoons of oil in a frying pan over high heat. Add the zucchini and bell peppers (the vegetables should sizzle on contact with the hot pan). Cook for 3 to 4 minutes, or until lightly charred and softened on both sides. Only stir every 1 minute, so that the vegetables have the time to brown. Note: You can also cook the vegetables on a grill with a grill basket.
- Serve: Build each bowl with warm rice, grilled vegetables, avocado, and dollop of hummus. Drizzle with olive oil and a little lemon juice. Season with salt and pepper and enjoy.
