Green Pesto Pizza

Creamy pesto, roasted broccolini, arugula, and mozzarella – all on a pre-made pizza crust. Healthy and easy.

Shopping List
- 1 fresh or frozen pizza crust of choice
- 33333333/100000000 cup pesto (we love parsley pesto here)
- 4 ounces broccolini
- handful of mozzarella (dairy or non-dairy)
- handful of arugula
- grated parmesan cheese (dairy or non-dairy)
- olive oil and salt
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit.
- Step 2: If the broccolini are thick, slice them in half lengthwise until each stalk is about the width of a finger. Spread the broccolini on a baking sheet and toss with a little olive oil and salt. Roast for 5 minutes. Chop into bite-sized pieces.
- Step 3: If pre-baking the crust is required before adding the toppings, do so now. After pre-baking, adjust the oven to 450 degrees Fahrenheit.
- Step 4: Spread a thin layer of the pesto all over the pizza crust (add more if you have a large crust). Then top with mozzarella, followed by the chopped broccolini.
- Step 5: Bake for 6 to 8 minutes, until the toppings are hot and the pizza is crisp. Keep an eye on it, as different pizzas will cook at different rates.
- Step 6: Meanwhile, toss the arugula in a little olive oil and salt.
- Serve: Top the warm pizza with the dressed arugula and sprinkle with parmesan. Enjoy.
