Greek Yellow Split Pea Spread

If you like hummus, you'll love this creamy yellow split pea spread originating from the Greek island of Santorini. Garnish with capers and juicy tomatoes and serve alongside crusty bread or pita for the ultimate appetizer.

For the Peas
- 1 cup yellow split peas, rinsed
- 1/2 large yellow onion, diced
- 1/2 medium peeled carrot, diced
- 1/4 cup extra virgin olive oil (plus more for serving)
- 1 garlic clove
- 1 teaspoon salt For Topping
- halved cherry tomatoes, drained capers, and chopped red onion
Instructions
- Step 1: Rinse and pick over the peas for any small stones or debris.
- Step 2: Combine the peas, onion, carrot, and salt in a pot. Add 4 cups of water. Bring to a boil and then lower to medium heat.
- Step 3: Partially cover the pot with a lid and simmer for 30 to 40 minutes, or until the peas are tender. As the peas simmer, skim off any excess foam that bubbles up. Note: Add an additional splash of water if needed to prevent sticking (we usually add around 1/4 cup).
- Step 4: Once the peas are tender and the liquid is absorbed, transfer the peas to a food processor or immersion blender. Add the garlic and olive oil. Blend until very creamy.
- Serve: Dollop some of the spread into a bowl and top with tomatoes, capers, red onion, and a drizzle of olive oil. Enjoy with bread.
