Greek White Bean Salad

This healthy Greek White Bean Salad is easy to make and only requires cucumbers, tomatoes, white beans, bell pepper, olives, and onion. Make it a more filling with a little feta or warm brown rice mixed right in.

For the Salad
- 1 1/2 cup cucumber, quartered and sliced
- 1 1/2 cup cherry tomatoes, quartered
- 1 (15 ounce) can white beans, drained and rinsed
- 1 green bell pepper, diced
- 6 tablespoons kalamata olives, sliced
- 1/4 cup pepperoncini and/or red onion, chopped For the Vinaigrette
- 5 tablespoons extra-virgin olive oil
- 4 teaspoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 salt and pepper, to taste
Instructions
- Step 1: Place the chopped cucumber, tomatoes, drained beans, bell pepper, olives, pepperoncini or onion in a large bowl. Pour in the vinaigrette ingredients and toss to combine.
- Serve: Enjoy!
