Gooey Microwave Brownie

For the Cake
- 1 1/2 tablespoons unsweetened cocoa powder
- 1 tablespoon cane or coconut sugar
- 1 tablespoon coconut flour
- 1 tablespoon smooth almond or peanut butter
- 2 tablespoons unsweetened applesauce
- 1 1/2 tablespoons non-dairy milk For Topping (optional)
- chocolate chips and/or ice cream
Instructions
- Step 1: Add all of the cake ingredients to a wide microwave-safe mug or 4-inch ramekin (we use this one). Stir until smooth and well combined. Be sure to stir the corners as well, to mix any flour hiding in there.
- Step 2: Microwave for 60 to 90 seconds, depending on your microwave wattage. We like to slightly undercook it, so that the middle is still a bit gooey. If making more than 1 serving, microwave each brownie separately, as combining them will affect the microwave time settings. Note: If you don't have a microwave, bake the brownie in an oven-safe ramekin for 9 to 12 minutes.
- Step 3: Sprinkle with chocolate chips and let the brownie cool for 1 to 2 minutes before digging it. This rest time will help the brownie finish cooking.
- Serve: Enjoy. This is epic with a big scoop of ice cream.
Recipe Notes
Note 1: If using raw cacao powder (which is more bitter), we recommend using only 1 tablespoon and increasing the sugar to 1.5 tablespoons.
