Golden Cauliflower Tabbouleh

Tabbouleh is a refreshing and healthy Middle Eastern salad made with plenty of fresh herbs, vegetables, olive oil, and lemon juice. Rather than traditional bulgur, this tabbouleh variation is made with low-carb turmeric cauliflower rice for a boost of flavor and nutrition.

- 3/4 cup fresh or frozen riced cauliflower
- 1/16 teaspoon turmeric
- 1/2 cup parsley leaves, chopped
- 2 tablespoons mint, chopped (or cilantro)
- 1 roma tomato, seeded and finely diced
- 2 scallions, sliced (white and light green parts only)
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons lemon juice
- 1/8 teaspoon salt and black pepper
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit. If using frozen cauliflower, break up any frozen clumps with your hands (or defrost it).
- Step 2: Spread the riced cauliflower on a lined baking sheet and toss it with the turmeric until evenly coated. Bake for 8 minutes, or until tender. Set aside.
- Step 3: Finely chop the parsley and mint. Place the herbs in a mixing bowl and add the cooled turmeric cauliflower, tomato, scallions, olive oil, lemon juice, salt, and pepper.
- Serve: Toss everything together and enjoy chilled or at room temperature.
