Goat Cheese and Pear Quesadillas

Crispy quesadillas filled with tender sautéed pear, spinach, and melty goat cheese. Ready in minutes.

Shopping List
- 2 (6 to 8 inch) tortillas (we use these cassava flour tortillas)
- 1/2 pear, thinly sliced
- 1/4 cup goat cheese, crumbled
- 1 handful spinach
- 1/2 tablespoon olive oil, plus extra for brushing
- salt and pepper, to taste
Instructions
- Step 1: Heat the olive oil in a skillet over medium heat. Add the pear slices and cook for 2 to 3 minutes, or until softened. Add the spinach and cook another 1 minute, until wilted. Transfer to a plate.
- Step 2: Heat the empty skillet back up over medium heat. Warm the tortillas on both sides, about 30 seconds. Top 1 of the tortillas with the pear mix and crumbled goat cheese. Sandwich the tortillas together.
- Step 3: Brush or spray the top of the quesadilla with a little oil, then carefully flip it with a spatula. Cook until golden and crispy on both sides, about 1 to 2 minutes.
- Serve: Slice and enjoy immediately.
