Ginger Date Energy Balls

These healthy energy balls taste like a chocolatey ginger cookie! Blend the ingredients with a food processor, shape into balls, then dunk in melted chocolate. This recipe was adapted from Deliciously Ella.

Shopping List
- 200 grams raw or dry-roasted cashews (1 2/3 cups)
- 200 grams pitted medjool dates (about 11 dates)
- 25 grams vegan protein powder of choice (about 5 tablespoons)
- 25 grams rolled oats (about 5 tablespoons)
- 33333333/100000000 cup chocolate chips
- 2 1/2 teaspoons ginger powder
Instructions
- Step 1: Add all ingredients, except the chocolate, to a strong food processor. Blend until well combined, scraping down the sides as needed. The dough will be ready when it clumps up like a ball and no large nut or date pieces remain.
- Step 2: Roll the dough into ping-pong sized balls. Freeze while you prepare the chocolate.
- Step 3: Melt the chocolate chips in a microwave-safe bowl (or use a double boiler) in 15 second intervals. Stir the chips between intervals, taking care that they do not burn. If you’re having trouble melting, you can add in a few spoonfuls of coconut oil.
- Step 4: Drizzle or dunk the ginger balls into the melted chocolate. Place on a piece of parchment paper. Repeat with all of the remaining balls. Store in the freezer.
- Serve: Enjoy these directly out of the freezer for a chewy treat. Let it sit on the counter for 5 minutes to soften.
