Garlicky Tomato Toast

Garlicky warm burst tomatoes piled high over a crunchy piece of toast slathered in creamy nut-milk cheese. A delicious and savory light meal or snack.

Shopping List
- 1 to 2 large slices crusty bread, such as sourdough
- 3/4 cup cherry tomatoes, quartered
- 1/2 tablespoon extra-virgin olive oil
- 2 garlic cloves, chopped
- 1/4 teaspoon dried oregano (optional)
- spreadable non-dairy cheese, to taste (we like Boursin or cream cheese)
- salt and black pepper, to taste
Instructions
- Step 1: Toast the bread in a toaster oven or under the broiler for a few minutes (keep an eye on it to avoid burning).
- Step 2: Meanwhile, heat the olive oil in a skillet over medium-high heat. Add the garlic and cook for 30 seconds, until beginning to color. Add the tomatoes and cook for 2 to 3 minutes, or until the tomatoes have softened and the skins are beginning to wrinkle. Season with the optional oregano, salt, and pepper.
- Serve: Slather the bread with a generous layer of cashew cheese and pile the warm garlicky tomatoes on top. Enjoy.
