Garlic-Smashed Baby Potatoes

Tender baby potatoes with tasty crispy edges and savory seasonings. The process is simple: boil the potatoes, gently press them with a glass, and then bake until golden. The seasonings here are all pantry-friendly, perfect for last-minute easy side dish.

- 1 1/2 pounds small potatoes (680 grams)
- 3 tablespoons cooking oil or olive oil
- 1/4 heaping teaspoon garlic powder (or 3 cloves crushed garlic)
- 1/4 teaspoon onion powder
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon fennel seed (optional)
- salt and pepper, to taste
Instructions
- Step 1: Bring a large pot of water to a boil and add 2 teaspoons of salt. Carefully add the whole potatoes and bring to a low boil. Boil the potatoes for 20 to 30 minutes, or until they are fork-tender but not falling apart. Boiling time will vary depending on the size of the potatoes.
- Step 2: Meanwhile, preheat the oven to 410˚F. Drained the potatoes well and transfer them to a lined and lightly oiled baking sheet. Let cool for several minutes.
- Step 3: Use a potato masher or the flat bottom of a glass to GENTLY press down on each potato so that it flattens to about 1/2 inch thick. Don't push too hard, or else the potato will be completely mashed.
- Step 4: Mix together the remaining olive oil, garlic, onion powder, Italian seasonings, and optional fennel seeds in a small bowl. Drizzle the seasoned oil over the smashed potatoes. Season with salt and abundant pepper. Bake for 30 to 35 minutes, or until the potatoes are golden and crisp on the edges.
- Serve: Transfer the potatoes to a serving bowl and drizzle with additional oil or melted butter. Enjoy.
