Fish Ceviche

Ceviche is a traditional South American dish of raw fish or seafood marinated and 'cooked' in acidic lime juice. This version is loaded with fresh fish, cucumber, jalapeño, and a pop of mango. Perfect alongside crunchy plantain or tortilla chips.

For the Marinade
- 3/4 pound firm, lean white fish (such as halibut, sea bass, or mahi-mahi)
- 33333333/100000000 cup fresh lime juice For The Rest
- 1/4 cup cucumber, diced
- 1/4 cup ripe mango or papaya, diced
- 1/2 jalapeño, seeded and chopped (use half for less heat)
- 1/8 avocado, diced
- 2 tablespoons cilantro, chopped
- 1 tablespoon red onion, finely chopped
- 1/2 teaspoon salt
Instructions
- Step 1: Rinse and dry the fish and chop into bite-sized pieces. Combine the lime juice and fish in an airtight bowl. The fish should be completely submerged in the lime juice. Cover and refrigerate for 30 minutes up to 4 hours.
- Step 2: Finely dice the cucumber, mango or papaya, jalapeño, avocado, and onion into very small pieces.
- Step 3: Once the fish is ready, add the chopped cucumber, mango, jalapeño, avocado, onion, cilantro, and salt. Stir well.
- Serve: Enjoy immediately with crunchy tortilla or plantain chips on the side.
