Fajita Vegetables

These fajita-style vegetables are a tasty and easy 1-pan recipe ready in 10 minutes. Serve these up in a Salmon Fajita Bowl, salad, or taco.

Shopping List
- 1 zucchini, sliced into half-moons (optional)
- 1 bell pepper, thinly sliced
- 1/2 yellow or red onion, sliced
- 2 cloves garlic, minced
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- salt and cayenne pepper, to taste
Instructions
- Step 1: Heat the olive oil in a wide skillet over medium-high heat. Once sizzling hot, add the bell pepper, onion, garlic, cumin, oregano, and optional zucchini. Season with salt (about .25 teaspoon) and a small pinch of cayenne pepper.
- Step 2: Cook for 5 to 7 minutes, or until the vegetables are tender but still retain their shape. Stir only every 1 minute or so, so that the vegetables get some nice browning.
- Serve: Transfer to a plate and enjoy.
