Egg White and Avocado Bagel

A classic bacon, egg, and cheese bagel recipe with a healthy twist. Egg whites, turkey bacon, and a generous amount of creamy avocado makes it even better.

Shopping List
- 1 bagel, toasted (or low-carb bagel)
- 3 to 4 large egg whites (Note 1)
- 2 slices cheddar cheese (or non-dairy cheese)
- 2 turkey bacon slices
- 1/2 avocado, mashed
- 1 small handful sprouts or microgreens (optional)
- salt and pepper, to taste
Instructions
- Step 1: Halve and toast the bagel. Mash the avocado over the bottom half of the bagel.
- Step 2: Separate the egg yolks from the whites and place all of the egg whites in a bowl. Whisk the egg whites with a fork a few times until combined and season with salt and pepper.
- Step 3: Heat a lightly greased or buttered frying pan over medium-high heat. Pour in the egg whites so that it makes a large round-shaped omelette. Cook for 1 to 2 minutes, or until the bottom of the omelette is cooked. Place 1 cheese slice in the middle of the omelette and use a spatula to fold the edges of the omelette towards the center of the pan so that they cover the cheese slice like a square-ish parcel. - Step 4: Flip the omelette over so that the side that was on the bottom is now on top. Place the remaining cheese slice on top of the omelette and cover the pan with a lid until the eggs are cooked to your liking and the cheese has melted.
- Step 5: Use a spatula to place the cheesy omelette over the avocado half of the bagel. Return the pan to the stove and add the bacon slices. Cook until crispy on both sides.
- Step 6: Top the omelette with the bacon slices and add the optional sprouts. Place the other bagel half on top.
- Serve: Slice and enjoy.
Recipe Notes
Note 1: 2 whole eggs can also be used.
