Egg Fried Rice

The best egg fried rice recipe that's just as good as takeout! Using day-old cooked rice is key to keeping the fried rice perfectly cooked without a mushy texture.

- 2 cups cooked jasmine rice, chilled overnight
- 1 cup frozen mixed vegetables
- 2 eggs
- 3 scallions, sliced (white and light green parts only)
- 2 tablespoons butter
- 1 tablespoon hoisin sauce (or oyster sauce)
- 1 tablespoon tamari
- 1/2 teaspoon cane or coconut sugar
Instructions
- Step 1: Whisk the eggs in a bowl.
- Step 2: Heat a wide skillet with the butter over medium-high heat. Once the pan is hot, pour in the eggs. Let the egg sit for about seconds to set and then scramble, breaking the eggs apart with the spatula until cooked through.
- Step 3: Add the still-frozen vegetables to the eggs and scramble together for 1 to 2 minutes.
- Step 4: Add the cooked rice into the pan with the hoisin sauce, tamari, sugar, and sliced scallions. Break apart any large clumps of rice with the spatula. Cook everything together for 2 to 3 minutes. Season with salt and pepper if desired.
- Serve: Transfer the rice onto plates and enjoy.
