Egg and Bacon Platter

Fluffy scrambled eggs, crispy bacon, avocado, and sautéed bell peppers served with warm tortillas. Makes an epic breakfast or brunch.

Shopping List
- 4 large eggs, whisked
- 4 slices bacon (or turkey bacon)
- 1 bell pepper, sliced
- 1/2 red onion, sliced
- 2 to 4 tortillas (such as cassava or corn tortillas)
- 1 avocado, sliced
- butter, for frying (dairy or non-dairy)
Instructions
- Step 1: In a large skillet, heat a pat of butter over medium-high heat. Add the onion and bell pepper. Season with salt and pepper and cook for 5 minutes, or until softened but still with some bite. Only stir the pan every minute or two, so the vegetables can get some nice browning on the sides. Place on the serving plate.
- Step 2: Wipe the skillet clean melt another pat of butter over medium heat. Add the eggs and scramble to eggs to your liking. Slide onto the serving plate.
- Step 3: Last step! Wipe the skillet clean and fry the bacon until crispy. Place on the serving plate.
- Serve: Add the sliced avocado and some warmed tortillas to the serving plate with the eggs and bacon. Enjoy (yes, hot sauce is great here).
