Edamame Power Seed Salad

A colorful and healthy salad made with goji berries, greens, seeds, carrots, and edamame in a simple citrus dressing.

For the Salad
- 12 ounces shelled edamame, cooked (about 2 cups)
- 6 ounces spring mix (about 6 handfuls)
- 1 cup grated carrots
- 1/2 cup goji berries
- 3 tablespoons dried cranberries
- 4 tablespoons sunflower seeds
- 4 tablespoons pumpkin seeds
- 3 tablespoon hemp seeds For the Dressing
- 33333333/100000000 cup extra-virgin olive oil
- 1 orange, juiced
- 1 lemon, juiced
- 2 teaspoons honey (or agave syrup)
- salt and pepper, to taste
Instructions
- Step 1: Whisk together all dressing ingredients. Set aside.
- Step 2: Combine all salad ingredients in a bowl.
- Serve: Pour in some of the dressing, to taste, and toss to coat. Enjoy with extra dressing on the side.

Note 1: Recipe inspired by the Tibetan Salad at Erewhon Market of Los Angeles. Note 2: 1 juiced orange makes about 1/3 cup of juice.
