Hummus
- 1 (15 ounce) chickpeas, drained and rinsed
- 66666667/100000000 cup shelled edamame, cooked (fresh or frozen)
- 1/4 cup warm water
- 1 lime, juiced
- 3 tablespoons smooth peanut butter (or almond)
- 2 tablespoons grapeseed, safflower, or light olive oil
- 1 tablespoon white miso paste
- 1/2 teaspoon sriracha (double for spicy)
- salt, to taste Toppings (Optional)
- scallions, furikake, sesame seeds, sesame oil
Instructions
- Step 1: If using frozen edamame, warm the edamame in a microwave or saucepan before using.
- Step 2: Add all of the ingredients to a food processor. Pulse until the hummus is very smooth, scraping down the sides and bottom as needed. Taste and adjust seasonings as desired.
- Serve: Transfer the hummus into a serving bowl. This is great with a little drizzle of sesame oil too. Enjoy.
