Easy Protein Salad with Balsamic Vinaigrette

An easy and versatile healthy salad with fresh greens, crunchy celery, carrots, avocado, and grapes drizzled in a simple balsamic vinaigrette. Top it with your favorite protein and you're good to go! We love this with a slice of sourdough avocado toast.

Shopping List
- 3 handfuls spring mix
- 2 large carrots, thinly sliced
- 2 celery stalks, thinly sliced
- 1/2 avocado, chopped
- 1/4 cup seedless grapes, halved (or cherry tomatoes)
- 1/4 cup cabbage, thinly sliced (optional)
- 2 servings cooked protein of choice (such as chopped hard-boiled eggs, salmon, chicken, or chickpeas)
- balsamic vinaigrette, to taste
- Italian seasoning or dried oregano, for sprinkling
Instructions
- Step 1: Slice the carrots, celery, avocado, grapes, and optional cabbage. Toss the vegetables in a mixing bowl with the spring mix and a splash of the balsamic vinaigrette.
- Serve: Divide the dressed salad onto plates and top with the avocado and your protein of choice. Sprinkle a little Italian seasoning over the top and drizzle with more vinaigrette as needed. Enjoy.
