Easy Creamed Spinach ready in only 10 minutes! Made with frozen spinach, milk, cream cheese, and garlic for a tasty (and healthier than the original) creamed spinach side dish. Vegan.

Shopping List
  • 1 (16 ounce) bag frozen spinach, thawed
  • 1 cup non-dairy milk
  • 1/4 cup non-dairy cream cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • cayenne pepper, to taste
  • squeeze of lemon (optional, for serving)

Instructions
  1. Step 1: Use paper towels or a mesh strainer to squeeze the excess liquid from the spinach.
  2. Step 2: Heat the oil in a wide frying pan over medium-high heat. Add the garlic and cook for 30 seconds, stirring frequently. Add the squeezed spinach, milk, cream cheese, salt, nutmeg, and cayenne pepper. Stir for 2 to 3 minutes, or until the spinach is creamy and smooth. Add additional cream cheese and/or milk as needed to reach desired consistency.
  3. Serve: Add a squeeze of optional lemon juice on top and enjoy.
