Easy Cream Cheese Pasta

This Easy Cream Cheese Pasta is delicious and seriously creamy! Spaghetti, cream cheese, parmesan, capers, and garlic. We love adding in some smoked salmon to take it over the top.

Shopping List
- 6 ounces spaghetti (Note 1)
- 6 tablespoons cream cheese (dairy or non-dairy)
- 4 tablespoons grated parmesan (dairy or non-dairy)
- 2 tablespoons capers, drained
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 4 ounces smoked salmon, diced (optional)
- salt and pepper, to taste
- parsley (optional, for garnish)
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Before draining, reserve a mugful of the pasta water.
- Step 2: Heat the olive oil in a frying pan over medium-high heat. Add the garlic and cook for 30 seconds, or until golden. Add the drained pasta to the pan and cook for 1 minute, tossing well in the garlic oil.
- Step 3: Add the cream cheese, parmesan, and capers. Add 1/2 cup of the pasta water to the pan. Stir until the pasta is coated in the creamy sauce. Add more water, a spoonful at a time to loosen the sauce more. Stir in the optional diced smoked salmon. Season with pepper.
- Serve: Enjoy immediately for the creamiest taste.
Recipe Notes
Note 1: You can also use 3 servings of hearts of palm noodle pasta. No need to boil — just rinse the noodles well and add them in step 2. You can use regular water instead of the pasta water.
