Easy Chef Salad

Chef Salad! A use-what-you-have salad made with deli-meat, cheese, egg, tomatoes, cucumber, avocado, and greens drizzled with creamy ranch dressing.

For the Salad
- 4 handfuls romaine lettuce, chopped (about 5 ounces)
- 6 ounces deli-meat (any combination such as turkey, ham, and/or roast beef)
- 2 slices swiss cheese (optional)
- 1 hard boiled egg
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/2 avocado, sliced
- ranch dressing, to taste (store-bought or homemade) For the (Optional) Croutons
- 1 to 2 slices sourdough bread
- olive oil (for drizzling)
- garlic powder, to taste (optional)
Instructions
- Step 1: If making the optional croutons, preheat the oven to 400 degrees Fahrenheit. Cut or tear the bread into pieces and spread on a baking sheet. Drizzle lightly with olive oil and sprinkle with a little garlic powder. Toss everything together and toast in the oven for 8 to 10 minutes, or until golden and crunchy. Set aside when done.
- Step 2: Meanwhile, boil the egg until it is hard boiled (or use a pre-boiled egg). Peel off the shell and slice into quarters.
- Step 3: Slice or dice the cheese and deli-meat into bite-sized pieces.
- Step 4: Place the romaine in a serving bowl or plates. Top the lettuce with the hard boiled egg, deli-meat, optional cheese, tomatoes, cucumbers, avocado and optional croutons.
- Serve: Drizzle with ranch dressing and enjoy.
Recipe Notes
Read the ingredients of your ham and/or turkey. Aim for a variety that does not contain nitrates or other preservatives. My favorite options include Applegate Organics and Fork in the Road.
