Easy Broccoli Rabe (Rapini) Recipe

Broccoli Rabe (aka rapini) are a green vegetable that looks a bit like broccoli, but has a bitter taste similar to mustard greens or arugula. In this recipe, we first boil it until tender, then quickly sauté it with garlic and olive oil. Enjoy as a side dish, tossed into pasta, blended into pesto, or scattered over pizza.

- 1 bunch broccoli rabe
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- salt and red pepper flakes, to taste
- lemon juice, to taste
Instructions
- Step 1: Rinse the broccoli rabe and trim off the bottom inch of the stems. Cut the broccoli rabe into large pieces, about the length of a finger.
- Step 2: Bring a pot of salted water to a boil and add the rapini. Cook, uncovered, for 5 minutes. The rapini should be fork tender but still hold its shape. Drain well.
- Step 3: Heat the olive oil in a large frying pan over medium-high heat. Add the garlic and cook for only 30 seconds. Then add the boiled rapini. Continue cooking, stirring frequently, for another 5 minutes. If you have a very large bunch of rapini, you may need to add a little more olive oil. Once cooked, season with salt, red pepper flakes, and a little lemon juice. Toss to combine.
- Serve: Transfer to a plate, drizzle with optional olive oil, and enjoy.
